Sounds very cool! I love potstickers, so this would also be enjoyable to me. I think I actually bought a cookbook on stuffed appetizers once. What a great idea! My brother Ross has attended the Muscoda morel mushroom festival in Wisconsin at least a few times -- a pierogi made with those would be heavenly! Thanks for sharing this!!
I went to college at a Polish College, with a chef. The college was very small so we were quite spoiled. Our chef made homemade pierogies every other Friday and Steaks the alternating Fridays. Stupid me, I had no clue what a pirogi was so I gave mine up to get a double steak on Friday from the friends that loved the pierogies, most from Polish backgrounds! Today I could slap myself because at some point, I'm not sure when, I decided to try them and OH MY GOODNESS are they to die for!!!!! So I have to say... I love the pierogies and a festival of them... well sounds like a slice of heaven! LOL
