The herbs are going gangbusters, though I need to do some weeding. It's been too hot for anything besides watering and staying on top of budding flower stalks on the basil, dill and cilantro. Since my cilantro was about to burst, I decided to use some in a unique summer salad. You'll need:
6 cups balled cataloupe (use the larger scoop on your melon baller)
3 medium cucmbers peeled, seeded and sliced thin
1-2 Tbsp of chopped fresh cilantro or to taste
For the dressing
1/2 cup oil (I used olive oil but if you don't like the strong taste use canola)
1/4 cup fresh squeezed lemon juice
1 tsp. sugar
1/2 tsp. salt
Place the melon, cucumbers and cilantro in a large bowl. In a jar with a tight fitting lid, add the rest of the ingredients and shake until sugar is dissolved and mixture emulsifies. Drizzle over salad and refrigerate for at least one hour. Enjoy!
