A wonderful and tasty recipe that Cal helped me with. Recipe serves three with a good appetite.
3 boneless skinless chicken breasts
1 egg, beaten
splash of milk
1 t basil, rubbed
Italian style bread crumbs
Olive or vegetable oil
Homemade marinara sauce
1/2-1 cup freshly grated Parmesan/Asiago/Romano blend cheese
Mix egg, milk and basil in a large flat container with a tight fitting cover. Add chicken to egg mixture, cover and shake well til chicken is well covered.
Pour off egg mixture. Sprinkle breasts thoroughly with bread crumbs. Place coated chicken in the fridge and let sit for 15 minutes.

Preheat oven to 350°F.
Place chicken on a jelly roll pan drizzled with oil and bake for 30-40 minutes, depending on the size of the breasts.
Remove pan from oven and pour the marinara sauce over chicken. Sprinkle cheese on top and bake for 15-20 more minutes or til cheese is melted and golden.
Served over spaghetti with fresh English cucumbers that were tossed with red wine vinegar and sea salt.
