About once a week, I make some dishes from a different region of the world (either an area I love or an area I hardly know and want to learn more about). A few weeks ago I chose Kazakhstan. I grilled some Haloumi cheese, made some red rice and carrots, and some naan (flatbread). I burned the carrots (that's why there are so few on the plate), but other than that, everything was delicious
. And for dessert, I had an apple and some green almonds (which reminds me of lychee).

I'm a bit confused. While I know rice is important in Kazakh cuisine, usually in the form of plov, however, A friend of mone from Cyprus has indicated to me taht halloumi is a Greek cheese. And I've always understod Naan to be from India...
Don Houston, who commented above, has often been in Kazakhstan. Since he has spoken Russian fluently since childhood, he is able to communicate effectively with Kazakh cooks when they teach him. (BTW, Don and I are not related.)
Halloumi cheese originated in Cyprus, but a semi-soft sheep's milk cheese is eaten in Kazakhstan, and living in southern Maine, this was as close to authentic as I could get. Naan is eaten in India, but it is also eaten in Central Asia- the recipe I used was actually called Afghan Naan (close enough).
I love your idea of cooking foods from different areas of the world to learn more about them. How inspiring!
Jimmy, my cooking is pretty healthy. I don't use a lot of oil, never use butter, mostly organic, and keep the salt content to a minimum. So as long as your portions aren't too big, you should be okay :)
And in regard to burning the carrots: Practice makes perfect!
