Mayonnaise Cake

Mayonnaise Cake

2 C flour
1 t baking powder
pinch of salt
1 C sugar
1 t baking soda
4 T cocoa

Mix together. To this add 1 cup of warm water and 1 t vanilla. Fold in 1 cup of mayonnaise. Pour into 2 9-inch pans and bake for 20-25 minutes at 350 degrees. Top with chocolate frosting and sprinkle with nuts.

This is one of my favorite cakes Michelle. I believe it is the recipe that I once had many years ago that didn't use eggs. I haven't been able to find it! Thanks!

I've never had this particular version, but I bet it's similar to those chocolate cakes that use sour cream in them....just to give it that little extra kick. Thanks!

One of my ex-mother-in-law's favorites! My father-in-law would go on and on about how he hated mayonnaise, he couldn't eat mayonnaise, yada-yada... so she made him cakes with mayonnaise and of course he ate them (cuz it's just oil and eggs) and she got the biggest hoot out of the fact that she made him eat it and it didn't hurt him LOL
