I got up early this morning and went out to the garden to cut rhubarb for sale at the local market.

I cut 49 pounds of rhubarb for sale.

I boxed it up in a banan box and took it to market.

The 49 pounds did not even phase the first plot of rhubard that we have in our garden. We will give alot of our rhubarb away to family, neighbors and friends. We dont try to get rich off of the sale of it.
I am in the process of baking a rhubarb cake right now. It is so good and yet so easy to make. This particular recipe tastes like cake with homemade custard ontop. It is so good. My grandmoter used to make the best homemade custard and this cake tastes like her custard. This is just the best rhubarb cake that I have ever made. I love the custard taste.
Rhubarb Cake
1 white cake mix
3 cups chopped rhubarb (sometimes I add more)
1 cup sugar
2 cups whipping cream (unwhipped)
Make the cake mix according to the directions on the box. Pour into a 9 x 13 inch greased pan
Arrange rhubarb on top of unbaked cake. I sorta push the rhubarb down just a bit.
DO NOT STIR! Sprinke sugar evenly over rhubarb
Pour unwhipped crem evenly over the rhubarb.
DO NOT STIR
Bake at 350 for about 45 minutes.
The cream, sugar and rhubarb will for a custard layer
When baked, let cool enough to put in frige. This will keep the custard layer cool. Serve when the custard layer is completely cold.

We get alot of compliments on our garden. Rhubarb seems to really do good here.
Oh no you could not buy it from us, we give it away to neighbors.
The local market said that if they had to buy if from a supplier, they would have to sell it for $3.99 a pound. That is just sad. We sell it to the market for $1.00 a pound but even at that low price, we make good money off our crop. If everything goes well, We will have rhubarb good for sale from now until it frosts. The key is to keep it cut on a regular basis
Your garden looks like you put out quite a bit of rhubarb. I wish I could garden like that! HA HA!! I feel good that my houseplants are still living!
That cake recipe sounds really good and I think I might try it!
I did an article yesterday and put a recipe on rhubarb dumplings. It is wonderful. You hould make it. It is made in the microwave.
That is just one of our plots fo rhubarb. we have sevearl and they are all looking good.
We love rhubarb pie too.
I'd print this and make it myself but I know that most of it would go to waste. I'd eat what I could but I know my fiance wouldn't touch it. I tried coaxing him into trying a piece last night (actually, my icon pic) and he said I made him try it last year and he wasn't falling for it again. =)

Notice the raised bed that we have the rhubarb in is made from tires that my husband cut and then Rivited them together. It works great and is a wonderful way to recycle old tires.
I don't remember ever having rhubarb cake, but this sounds fantastic, so I'm saving it along with the other rhubarb recipes that you and Shannon have been posting.
Now off to the market so I can get some rhubarb!!
