I was hungry for Elita K’s macaroni and cheese again, and catfish always goes well with mac n cheese. So hear we are! Easy and yummay, my two favorite things.
4 catfish fillets, cut into smaller strips
1/4 cup hot sauce
1/2 cup buttermilk
2 garlic cloves, chopped
cornmeal for dredging
peanut or vegetable oil for frying
salt and pepper to taste
Mix buttermilk, hot sauce and garlic. Marinate catfish in the mixture for one hour. Dredge in cornmeal, pressing to coat. Let rest in fridge for about 15 minutes.
Meanwhile heat a large frying pan or cast iron skillet on medium high. Add oil. When oil is very hot, fry fillets til nice and golden on each side, turning only once. Drain on paper towels. Add salt and pepper.
