One of my favorite sauces/condiments to use for cooking is Asian chili sauce, otherwise known as Sambal Oelek. It is quite spicy, so if needed, add a little tomato juice to tame the fire.
Since I just tossed together the ‘slaw, measurements are approximate.
1 pound pork tenderloin, trimmed
2 tablespoons brown sugar
2 tablespoons soy sauce
1 1/2 tablespoons sambal oelek
1 teaspoon ground ginger
1 teaspoon peanut or sesame oil
3 garlic cloves, chopped
Combine pork with the rest of the ingredients in a large ziploc bag. Marinate for 24 hours, turning bag occasionally.
Preheat grill on medium heat.
Remove pork from bag; discard marinade. Place pork on grill; grill 10 minutes per side or til desired doneness, turning frequently.
Served with Asian Slaw.
Asian Slaw
1 head Napa cabbage, sliced thin
12 baby carrots, grated
2 stalks celery, sliced
1 T peanut or sesame oil
2 T rice vinegar
1 T brown sugar
1-2 T sambal oelek
toasted sesame seeds
salt and pepper to taste
Rinse cabbage and drain well. Toss ingredients and chill til ready to serve.
