I needed help finding a recipe for potato soup. I need one that is simple. The problem I am having is that my husband has bad stomach problems ( the food goes down and doesn't stay down, he is having surgery for it next month) and he can't have onions or anything spicy (includes sausage, chocolate, or anything like that). All the recipes that I am finding are not simple or have something that he can't eat. If anyone has any recipes that they no of, I would love to get them. The recipes also have to be cheap ( my hubby and I are on food stamps and they don't go a long way). Thanks everone.

and you can either leave the diced potatoes whole or mash then all the way or partway. what ever you prefer
4 or 5 medium potatoes 2 to 3 Tbsp. butter
1 medium onion salt & pepper to taste
1/2 to 1 pound ham, diced seasoned salt if desired
1 to 2 cans evap. milk
Cut peeled potatoes into small pieces;put in pan with ham and onion, add just inough water to cover everything. Boil until potatoes are tender; do not drain. Add milk, salt , pepper and butter. Heat over low heat.
Rubbins: 1 to 2 eggs enough flour to make crumbly
about 1/4 tsp. salt
Drop pieces into hot soup and cook over low heat until rubbins are done(about 12 to 14 min). Soup will be thick.
I hope you enjoy it. Whenever I have someone new over they wrinkle their nose at the word rubbins, but as their leaving their asking for the recipe!

Anyway, cook those in boiling water with chunked ham (great to use now that easter is over) to just cover the potatoes, so that when the potatoes are done, you don't have to get rid of much water...since that's where your flavor is.
Use a can of cream of chicken soup, then I pour in half and half. I use a little pepper, red pepper, tiny bit of garlic and sometimes I even use corn when the potatoes are boiling. Simmer until hungry.
