Who says you need a grill to make great barbecue? These spareribs bake in the oven and can be easily reheated.
Yield: 4 to 6 Servings
Ingredients
4 lbs "Country Style" pork spareribs, cut into serving pieces
1/4 cup soy sauce
1/2 cup plum jam or preserves (not too chunky)
1/2 cup ketchup
1/2 teaspoon ground ginger
Method
Preheat oven to 350 degrees.
Put the ribs in a pot and cover with water. Bring to a boil then lower heat and simmer gently for 30 minutes. Drain.
In a medium bowl, whisk to combine the soy sauce, plum jam, ketchup and ginger.
Dip each rib in the sauce and place in one layer, in a large baking dish or casserole. Cover with lid (or cover dish with foil) and bake for 45 minutes.
Remove lid, flip the ribs and baste with remaining sauce. Continue baking uncovered for 15-30 minutes or until tender, dark and sticky.
