This was an easy meal to set up tonight- the pork roast rub was applied yesterday and the meat marinated overnight.

Southwest Rub
2 T chili powder
2 T paprika
1 T coriander
1 T oregano
1 T salt or to taste
1 T garlic powder
2 t ground cumin
1 t black pepper
1 t cayenne pepper
1 t red pepper flakes
I roasted the pork for about 1 1/2 hours at 350° til it was really tender. I let it sit for about 10 minutes then sliced for serving.

Jody, the leftovers got thrown away like they usually do. Neither one of us are big on pork roast leftovers, unless it's been cooked all day in the slow cooker Mexican style.
