I’ve had fun with several food blogging events, including a risotto challenge and Wine Blogging Wednesdays. So I decided to create a new event called Leftover Tuesdays, dedicated to trying to make leftovers something to celebrate. Hosted on my blog Cooking Chat with a related group here on Gather, the first LOT event drew entries from 10 countries and 5 continents.

ÂTed cooked up Chicken Hodgepodge Soup, serendipitously making the most of an uneaten roast chicken and vegetables.

Faith made a Tomato Chicken Curry with leftover roasted chicken and vegetables, which she put to use with a vareity of Indian spices. Looks very tasty!Â
My creation for the first LOT was Red Curry Chicken. This was a fast way to transform my savory roast chicken into something with some spice for the next night. This roast chicken will still be contributing to our table, as I also made some chicken veggie stock that awaits in the freezer.Â

I think I’m starting to like leftovers more already!
