I LOVE black bean soup, and this one tastes like you cooked it all day from scratch.
1 cup of your favorite salsa
2 (15 1/2 ounce) cans black beans
2 cups chicken, beef or vegetable broth
3 tablespoons fresh cilantro, minced
2 teaspoons lime juice
Pour salsa into a large sauce pan on medium and heat til just bubbling.
Add beans and broth to salsa. Bring to a simmer and cook for about 15 minutes.
Add minced cilantro and lime juice to soup.
Simmer for a few more minutes.
Variations: Serve with cilantro, cheese, red onion, sour cream
