Now that you have made the Boiled Chicken, here is a great use for it! This in a hurry meal, can be put together in about 30 minutes. This makes quite a bit, I usally freeze some for another meal.
I call this my hurry up dinner, because I use pre-cooked chicken.
This is a saucy chicken taco filling, so you should not need taco sauce, unless like me you like to add hot sauce!
You can add or omit spices to your taste. This recipie calls for no salt, but you can add salt to taste, I use Mrs Dash Mesquite & Spicy Blends in this dish, instead of the sodium, and we do not miss the sodium.
Low Fat Saucy Chicken Tacos
4 cooked chicken breasts shredded or diced (I prefer shredded, to shred use two forks)
2 cans diced tomatoes (I use three we like it with more tomato)
1 cup diced celery
1 cup diced red, green peppers or a mixture of both
1 large onion
2 cloved minced garlic
1 tablespoon olive oil
*Hurry up tip #1: Instead of chopping the celery, onion & peppers, use 2 packages Vegetable Sasoning blend. buy Publix brand, Pic-Sweet also makes this, it is essentially chopped onion, celery & frozen peppers.I have several packages in my freezer, it is a timesaver.
*Hurry up tip # 2: For the garlic, most stores sell minced garlic in a jar use 1 or 2 teaspoons to your taste.
Seasonings:
1 teaspoon cayanne pepper
1 teaspoon cumin
1 teaspoon oregano
2 Tablespoons dried cilantro if you prefer use you may use parsley or a blend of both cilantro & parsley
Mrs Dash's Spicy Blend & Mesquite Blend to taste - but you may leave one or both out if you prefer.
*Hurry up tip #3: Use a Taco Seasoning Mix, but be aware this will add sodium to the dish.
Heat olive oil in a large fry pan, add veggies & garlic cook until onion is translucent, add chicken stir to mix, add canned tomatoes,
chicken & spices, stir well heat untill sauce boils, reduce heat to simmer, cook untill heated I cook this 25-30 minutes. The taco filling is very saucy, you may prefer to cook it down until sauce thickens, we like it saucy.
This is a great taco, burrito & wrap filling. Since it has veggies & tomato in it we do not add those.
I have made double the recipie, and frozen portions of this, it reheats well.

Your tips on the frozen onions, etc is great too! I noticed recently that my local grocery store has frozen peppers and onions (packaged separately) for 50 to 65 cents per bag -- it's a great time saver, and esp. with the onions that I dislike chopping (always teary-eyed when I do) ... and it's a good price too, esp. compared to our sky-high winter produce costs.
I forgot to add this makes a great quesadilla filling, just add your choice of cheese.
I buy the chopped frozen onions for the same reason Nancy I get teary eyed & nothing helps. I even bought a food processor, all I managed to do with that was make onion puree. LOL!
Produces prices are unreasonable, I have noticed many people buying canned & frozen fruits and veggies. I hope the prices do come down this summer!
