This cooking method results in very moist chicken, when you try this you will never buy the precooked -prepackaged chicken again.
The chicken can be eaten as is, added to salads,used in for recipies that called for cooked chicken, made into chicken salad. I make portions and freeze it, then when I need it I just grab a portion from the freezer and I am all set for a quick dinner. This is a great low fat - low sodium alternative to the prepackaged chicken sold in supermarkets. Since you are cooking this you can control sodium, I usually do not add any, since the chicken is going to be used for recipies & wraps.
Boiled Chicken
6 or 8 skinless bonless chicken breasts, *you may also use 1 whole chicken
3 carrots peeled cut into chunks
3 stalks celery cut into chunks
1 medium onion chut into chunks
2 cans low sodium chicken broth (I also use the reduced fat broth)
Pepper to taste
Get the largest pot you have, I use a 8 quart pasta pot, make sure you have a lid.
Place the chicken, carrots, celery, and onion in pot, add pepper, chicken broth & water to cover the cicken & veggies. You don't need to fill the pot to the top, but you do want to add enough water to cover.
Turn heat on high, cook this uncovered until a rolling boil, immediately cover cook 5 minutes & turn off heat. Let pot sit covered (on burner) 1 to 1 1/2 hour until the pot & chicken are cooler.
At this point you can take out and use in any recipie, or portion out the chicken & freeze.
If you use the whole chicken, you can debone this, the skin & meat just come off the bones.
The added bonus to this, is that you get chicken broth, to make soup, or to use for cooking rice or pasta!
