Tonight was serendipitous. I couldn't possibly give you a recipe but here's what happened...
Last night my sainted wife roasted a chicken with root vegetables, carrots, turnips, parsnips and onions. Turned out she had a sour stomach and I wasn't really hungry so we cut up the chicken, stored the veggies and bagged the carcass and went to bed without supper.
Tonight, I cut up a couple of carrots, celery stalks and half an onion, sauteed them and added the carcass and water to cover. A pinch of salt and a couple grinds of pepper and in an hour I had a nice stock, but not enough for soup. I had saved the cooking juices from last night but in the fridge they had gelled, which meant too much fat for me. I needed more liquid for the soup. Here's where leftover night comes in.
I had a little bit of homemade chicken stock in cubes which I added to the fresh (strained) stock. I also had a mystery frozen container of a leftover stock that for some reason I can't remember making but was pretty vinegary. Well, when I added that to the pot the vinegar smell was strong but the taste was nice
A little doctoring with salt and pepper sauce, adding the previous nights roasted vegetables and the chicken, and we had a very tasty, moderately healthy and totally unrepeatable dinner, served with a sprinkle of parmagianno reggianno and crackers with cheese.
I'd be interested, what do you have in your larder that would have been a nice addition?
