Since there has to be a side dish for the Barbequed chicken. I suggested this. Hubby is game to try this. We both love this. This makes a chunky smashed potato, you can mash these if you would like this smoother.
Red Skinned Mashed Potatoes (serves 12)
4 1/8 pounds Red Potatoes (washed)
3 tbsp Chives (cut into 2” pieces)
1 cup Milk
1 cup Heavy Cream
3 tbsp Butter (cut into large chunks)
1 clove garlic minced (we use two cloves)
2 pieces pre-cooked bacon or 1 tablespoon (hormel) bacon pieces.
1/2 cup chedder cheese
Salt and Pepper to to taste.
Place potatoes in a pot and cover with cold water. Boil potatoes until they are cooked. Cook garlic if desired in 1 teaspoon butter for 3-5 minutes, I usally cook the garlic for 5 minutes over a medium-low heat. Smash potatoes with skin on, do not mash them leave these smashed potatoes slightly chunky. Add heavy cream, butter, and milk, and incorporate together. Then Fold in minced garilc, bacon, and cheese into potatoes. Season, garnish with chives and serve.
