This recipe is based on one that Paula Deen had on her show. I adapted it to meet my particular tastes, as I don’t really care for green pepper, which the original called for.
1 1/2 pounds ground beef
1 cup Ritz cracker crumbs
1 egg, beaten
1/4 cup lemon juice
1 cup grated cheddar cheese
2 teaspoons Steak Seasoning
4 new potatoes, sliced thin
1 large onion, sliced thin
8 baby carrots, cut in to thin strips
8 slices bacon
In a large bowl combine ground beef, cracker crumbs, egg, lemon juice, cheese, and seasoning. Mix well. Do not overwork meat.
Place four slices of bacon in the bottom of a large loaf pan. Scoop in beef mixture. Layer potato slices, onion slices, and carrots. Top with rest of bacon. Cover with tin foil and bake at 375°F for approximately 60 minutes.
Uncover and bake about 15 minutes more, or until bacon is crispy.
