This is one of our family traditions for brunch. I start this the night before so it is ready to pop in the oven the next day.
- 1 pound bacon, ham or sausage
- 1 tablespoon butter
- 1 onion, chopped fine
- ½ green pepper, chopped fine
- 2 cups mushrooms, well drained
- 4 cups frozen hash brown potatoes, thawed
- 1 teaspoon salt
- 1/4 teaspoon garlic salt (optional)
- Mrs Dash or Old Bay (optional)
- 1/2 teaspoon ground black pepper
- 6 eggs
- 1 1/2 cups milk or half and half
- 1 pinch dried parsley
- 1 cup shredded Cheddar cheese (or your favorite variety)
- Preheat oven to 400°F. Spray a 9x13 inch casserole dish with cooking spray.
- Place bacon or sausage in a large frying pan. Cook over medium high heat until evenly brown. Drain well and set aside. In a separate skillet, melt the butter and fry onions, green pepper and mushrooms until veggies are tender.
- Place potatoes in bottom of prepared dish. Sprinkle with salt, garlic salt, and pepper. Top with bacon and onion mixture.
- In a large bowl, beat eggs with milk and parsley. Pour over casserole. Top with grated cheese. Cover tightly and refrigerate overnight.
- Bake in preheated oven for 1 hour or until set.
Variations: Add or subtract as you desire. Garnish with chopped fresh tomato. Use buttered bread in place of hash browns. Top with hot sauce or salsa.

Lori, the concept is similar- layers of egg stuff. Quiche has a dough crust (which I don't really care for). This one uses hash browns or bread as a base.
And yeah, you can say he's cute. He's my friend. If he wasn't, you couldn't. ;)!!!

Emily, leave it out and just use veggies! Broccoli, red pepper, heck even asparagus!
