Yesterday, I decided to make some homemade bread. I wanted to make something different, not the normal stuff I always make. I am not a recipe follower, so to speak. I look over the recipe and think how I can make it better. So I pulled up a recipe that I not made yet this holiday season and began to write my changes. I mixed it up, put it in my loaf pans and shortly the kitchen had the aroma of spices and pumpkin and pure yummy!
I am going to publish the recipe with my adjustments. Hope you enjoy it. It is quick and easy to make. Stores well as my husband can verify. It makes 2 large loafs and he ate one loaf yesterday and the other today. It is so moist and well...........just perfect. I had to rename it also because of the additions that I made. Are you ready to make the best pumpkin bread ever??? It would make a great gift for the hostess.
Pumpkin Cranberry Cream Cheese Bread
2 1/2 cups sugar
1 8oz cream cheese (softened)
1/2 cup butter (not margarine)
4 eggs
1 16 oz can pumpkin
3 1/2 cup flour
2 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 tsp baking powder
1/4 tsp ground cloves
1 cup chopped nuts
1/2 cup sliced fresh cranberries
Combine sugar, cream cheese and butter, mixing at med speed until well blended.
Add Eggs, one at at time, mixing well after each addition. Blend in pumpkin.
add combined dry ingredients, mixing just until moist. Do not over mix.
Fold in nuts and cranberries. Pour into 2 large greased and lightly floured loaf pans.
Bake 350 for about 1 hour or until toothpick incerted in center comes out clen. Cool 5 min, then remove from pans.
You can also make this in a bunt cake pan or angel food cake pan for a different kind of bread.

hmmm...I'm trying to think of another fruit that goes well with pumkin : )
Even those candied colorful fruits , I always look at them but never tried them...
dried figs work well in this recipe to.
