Chuletas Del Las Novadades

Yield: 4 Servings
8 ea Center-cut pork-chops about 4-oz ea
Salt & pepper to taste
4 ea Cloves garlic
1/4 ts Dried oregano
1/4 ts Ground cumin
2 ea large onions thinly sliced
1/4 c pure Spanish olive oil
1/2 c dry sherry
1/2 c Seville (sour) orange juice
-OR-
1/4 c sweet orange-juice
1/8 c fresh lime juice
1/8 c fresh lemon juice
Season chops with salt & pepper.
In a mortar, crush the garlic, oregano & cumin together into a paste.
Rub chops with garlic paste then place into a glass or ceramic bowl.
Pour orange juice over & cover with sliced onions.
Cover & refrigerate 3-4 hrs.
Remove chops from marinade, pat dry with paper towels, & reserve the marinade.
In a large skillet, heat oil over med- heat until fragrant.
Brown chops on both sides.
Add sherry & reserved marinade, including onions.
Cover & cook 15-20 mins. until chops are tender.
Serve hot with yellow rice & black bean.
