Porskinti Raudoni Kapustai - Braised Red Cabbage W/ Sour-Cream

Yield: 6 Servings
3 lb Red cabbage shredded
1/2 c Coarselchopped onions
1 ts Finely chopped garlic
2 tb Tomato paste
3 c Cold water
2 ts Salt
6 tb Butter diced 1/4"
3 tb Fresh lemon juice strained
1 tb Sour cream
Combine shredded cabbage, chopped onions & garlic in a 4-qt glass casserole.
Mix tomato paste in water & stir into cabbage.
Add 1 ts salt & butter then stirring constantly, bring to a boil over high heat.
Reduce heat to low, cover casserole & simmer 45 mins. until cabbage is tender.
Stir in lemon juice & other ts of salt then remove from heat.
Stir in sour cream & taste-test for seasoning.
Serve directly from casserole or mound cabbage in center of a large serving bowl.
Braised cabbage makes an excellent accompaniment to chopped meat patties or stuffed shoulder of veal.
