Initially, this recipe started as Roasted Chicken with Cilantro Crema, however, I have modified it to fit a low carb/lower fat version than the original. 4 skinless boneless chicken breasts extra virgin olive oil 3 oz reduced fat cream cheese, cut in to cubes 1 T. butter 3/4 cup half and half juice of 1 large lime salt and pepper 1/2 cup chopped cilantro (or to taste. I like a LOT of it) Diced tomato (optional) Brown chicken in olive oil and season with salt and pepper. Remove chicken from pan and add cream cheese with butter to pan drippings from chicken. Stirring, add half and half, lime juice and cilantro. On medium heat, stir all ingredients until melted. Put chicken back in sauce mixture. Cover and cook on low 15 minutes or til chicken is cooked through. Slice chicken and serve with sauce poured over the top. Garnish with diced tomato if desired. Serve with cilantro rice, if desired. (White rice ups the carb count considerably) Per serving: 4 CARBS, trace fiber, 220 cal, 25 g fat, 4 g protein. from my recipe box
