1 3/4 lb steak (about 3/4 in thick
2 T butter or oleo
5 medium onions
*1/3 C. water for less tender steak
Salt and pepper
Wipe steak clean with a damp cloth, trim off all fat. Season steak with salt and pepper. Brown slowly on both sides in hot butter. Add sliced onions, reduce heat, cook 15 min. Turn steak once, and carefully stir onions occasionally. Serve immediately. This method is good for tender steak. For less tender steak, add water just after browning meat, and reduce heat to simmering temperature. Cover and cook 35-40 min. or until meat is tender. Add onions during last 15 min. of cooking. 2-3 servings.
*"less tender steak" refers to the quality of the meat being cooked. If it is some old bull elk with a lot of miles on him, you probably should go for the more water and slow cooking.
