Lisa's EZ-Way Yorkshire Pudding

Yield: 12 servings
3 ea eggs
1 c milk
2 tb butter melted
1 c all-purpose flour
Preheat oven to 375 deg-F.
Beat eggs with milk in a medium sized bowl.
Stir in flour.
Set aside.
Divide butter evenly into 12-cup muffin tin.*
Distribute batter evenly among buttered cups.
Bake in oven 5 mins.
Reduce heat to 350 deg-F.
Bake 25 mins. until puffed & golden.
*NOTE:
You may also use a loaf pan & make it as 1 piece.

Couple of things to add to your recipe too. After you put the butter in the muffin pan holes then you should put the pan (with the butter in it) into a very hot oven until the butter is starting to smoke a tiny bit. Then add the batter into the cups. If you add the batter before the butter is hot it will just make a mess. LOL
If you make it in a large tin & add some cooked sausages into the mixture (just lay then in the batter) then you get what is called 'Toad in the Hole'. A really yummy traditional English dish!
I was born & grew up in England, so love yorkshire pudding!
However, when we had it at a restaurant, it was individual as if cooked in a muffin tin.
I love Yorkshire pudding!
first put muffin tin in with generous dash of oil in each cup
oven to be hot hot hot
while tin is heating get a cup
it dont matter what size but a smallish coffee cup 'l give ya four corkers
into a bowl put following
1 cup a/p flour
i cup milk and water mixed 50/50
i cup eggs
pinch of salt
pepper
(i always put a little dollop of french or dijon mustard in at this point for depth of flavour
beat to a batter
it dont matter if theres a few little lumps in it
when tin is red hot turn oven down to 200c/gas mark 7 ish/400 f
put an inch of mix in each tray
put straight back in oven high up but not on top shelf
wait 25 min
presto
massive fluffy yorkies
enjoy.
nb. in yorkshire it is customary to eat them as a starter with gravy
down south in uk they are also eaten cold with jam
no matter which way ya eat em
just do it.
