A CB recipe from Sizzle on the Grill , August 2006
Purchase your pork baby back ribs from a butcher or meat department you know. Have them remove the membrane from the underside of the ribs…you don't need it.

Cook time: 2 hours

Ingredients
4 lbs Pork Baby Back Ribs
BBQ Sauce of your choice
Preparation
Season the entire side of ribs with dry rub – use your hands to rub into meat (if necessary cover hands with disposable plastic cooking glove to ensure spices don't get in your skin)
Set aside and allow flavors to meld with the meat for at least 30 minutes
If possible, cover tightly in plastic wrap and leave in refrigerator over night (8+ hours) NOTE: do not cook ribs while in plastic wrap!
Remove ribs from refrigerator and come to room temperature before placing on grill.
Directions
1. Place entire side of ribs on a medium-hot grill over indirect heat; close grill hood and cook until ribs are tender, about 1 1/2 to 2 hours and maintain grill temperature of about 325-350 degrees F.
2. Finish by turning sides of ribs every 2-3 minutes for the last 15 minutes; lightly basting with barbecue sauce on the top side of ribs with each turn. This effort will result in a delicious glaze on the ribs.
3. Serve ribs directly from the grill by cutting into portions or, for extra tender ribs, remove sides from the grill and wrap in heavy-duty food grade plastic wrap; let ribs rest on counter for up to an hour.
4. Unwrap ribs, cut into serving pieces and serve with extra barbecue sauce.
