Date Chutney
1 1/2 c. cider vinegar
1 c. sugar
1/2 t. instant minced garlic
4 c. (2lb.) dates, pitted & coarsely chopped
1/4 t. cayenne pepper
1 t. ground ginger
1/4 t. salt
Combine vinegar, sugar and garlic in a saucepan and cook 7 - 10 minutes, or until a thin syrup is formed. Add remaining ingredients. Stir and cook 15 minutes or until thickened. Pack in hot, sterilized jars and seal airtight at once. Or, if desired, store in a covered jar in the refrigerator.
Serve with curries, lamb, pork, poultry or ham.
Yield; four 1 cup jars
