I usually start with ketchup for a base and then different ingredients to get the taste I want at that particular time.
It is hard to make a bad Bar-b-que sauce. You can make a sauce from scratch or change ready made ones. There are so many possible combinations which work out so well. During the spring and summer the specials make buying bar-b-que sauce more economical than catsup. This year there have been sales on eighteen ounce sauces as low as fifty nine cents. Usually I pick up a year's supply at these sales. When getting ready to bar-b-que, just change the taste to suit yourself. The following is a partial list of ingredients which can be added and you may use them one at a time or add several. Each time change the ingredients to get a different taste.
Powdered lemon flavoring
lemon juice
cayenne pepper
hot sauce
paprika
mustard
salt
black or red pepper
finely chopped or grated sweet pickles
garlic (diced, crushed, ground or powdered)
onion (same as garlic)
honey
brown sugar
molasses
soy sauce
liquid smoke
various fruit juices or fruit flavors
pickles liquefied in a blender or grated
any sauces, spices, herbs or flavoring you like
If you want something hot or sweet or sour or to have any particular taste, just add the ingredients needed to get the new taste.
Powdered lemon flavoring instead of lemon juice will make the sauce thicker instead of thinner. For the same reason you might use a ground pepper instead of hot sauce or pepper sauce to make something hot. If you prefer the taste of pepper sauce or don't want a thicker sauce don't use the ground peppers. Onion or garlic powder will make a slightly thicker sauce than fresh onion or garlic. You can even use dehydrated onions. By adding one to several different ingredients to different kinds of prepared sauces you now can easily make up hundreds or thousands of original bar-b-que sauces with superior taste.
To make similar sauces from scratch, start with catsup or tomato sauce or tomato paste or a combination. Add whatever ingredients you like. You will probably be surprised at how good your sauces will be. The sauces will taste different after they are cooked on the bar-b-que, so if it doesn't taste just right before using, still try it. Here is a list you can use as is or add to the sauce.
