I could eat one of these every day for the rest of my life and never get tired of it.
1 lb. roasted shredded pork (perfect use for leftover pork)
4 Cuban or French bread loaves
softened butter
8 oz. Swiss cheese slices (do not used processed)
1 lb. smoked ham, sliced (do not use water pack)
8 dill pickles (your favorite variety)
mayo/mustard
Cut the bread loaves in half (if needed). Smear butter on each half. Add pork, cheese, ham, and pickle. Press together and grill on a griddle or panini-type sandwich grill, using a weight (such as a cast iron skillet) if needed. Grill 'til cheese is melted.
These go great with a cuban/puerto rican type soup.
I have had this recipe forever, no idea where it orginated.
