Szekely Gulyas - Szekler Goulash

Yield: 6 Servings
2 1/4 lb Pork loin & shoulder
1 1/2 c Onions
2 tb Caraway seeds
4 oz Lard or Crisco
1 qt Pork or chicken stock
Water as required
2 3/16 lb Sauerkraut well washed
1 ea Garlic clove minced
1 c Cream
Salt to taste
Paprika to taste
Dill as desired
Take juicier cuts of pork & cut it into 4 oz. pieces.
Place meat on to stew with chopped onions, crushed caraway seed, crushed garlic clove previously sweated in Crisco.
Add a little finely minced dill.
Add a little water or stock and let it stew with the lid on till half done.
Now add sauerkraut, mix with the meat, season with sweet paprika according to taste.
Allow to simmer until the cabbage is ready.
Next pour in sour cream & bring to the boil again.
Before serving add a dollop of heated sour cream to the bowl.
