Linda Douglas inspired me with her blueberry article, please visit the article and feast your eyes on the berries and read the words then bake some of these:
Blueberry Bran Muffins
1 cup baking bran (wheat bran)or extra bran.
1/4 cup whetgerm or extra bran
1/2 cup Canola oil
1 cup plain or fruity yoghurt
1 large egg
3/4 wholemeal flour
3/4 plain flour
1 tsp cinnamon
1 tsp baking powder
3/4 tsp salt
1/2 tsp baking soda
1 cup brown sugar
1-11/2 cups frozen blueberries
or freshly picked !!(150 -180g)
1)Measure the first 5 ingredients into a bowl , mix to blend everything with a fork then leave to stand
2)Measure the remaining dry ingredients into a large bowl, and stir well with a fork to mix thoroughly.
3) Tip blueberries onto the dry ingredients with the liquid mixture, then fold everything together until the dry ingredeints are moistened.
4) Spoon the mixture into 1-15 medium or 30 mini muffin pans which have been buttered or sprayed.
5) Bake at 200°C for about 15 minutes
until centers spring back when pressed!
can't you smell them baking already? I can!

Any idea from wise bakers how to keep the blue berries nice looking after baked? do you need to slice them in half, what is the secret to having perfect blue berry muffins, with the berries looking intact?
