I don't know about the rest of you but lately, anything cool and minimal work, is what's for dinner. These are the three recipes, I have been working with lately. Let me know what you think. If you try them, let me know.
Fruits with Cheese Dip
4 oz cream cheese
2 tablespoons cream, or milk
3 teaspoons honey
3/4 teaspoon vanilla
1/16 teaspoon nutmeg, or mace
1/16 teaspoon cinnamon
3 teaspoons fresh lemon juice
2 tablespoons diced toasted almonds
Blend together all ingredients except almonds. Chill. When ready to serve place dip in small bowl. Top with almonds. Place bowl on plate and surround with assorted fruits such as banana slices, melon cubes, grapes, strawberries and peach or nectarine slices.

Cucumber Jell-O Salad
1 small box lime Jell-O
3/4 c. boiling water
1/4 c. lemon juice
1 small onion, grated
1/2 c. margarine
1/2 c. sour cream
1 c. grated cucumber (unpeeled)
Dissolve Jell-O in boiling water. Add lemon juice and remaining ingredients. Chill in refrigerator until set.

No Bake Chocolate Peanut Butter Bars
2 cups peanut butter,divided
1 1/2 sticks butter, softened
2 cups powdered sugar
3 cups graham cracker crumbs
12 oz pkg semi sweet chocolate mini morsels
Beat 1 1/4 cups peanut butter and butter in a large mixing bowl until creamy. Gradually beat in 1 cup powdered sugar. With hands or wooden spoon, work in remaining powdered sugar,graham cracker crumbs and 1/2 cup chocolate chips. press evenly into greased 13x9-inch baking pan. Smooth top with spatula. Melt remaining peanut butter and chocolate chips in medium heavy saucepan over low heat stirring constantly,until smooth. Spread over graham cracker crust pan. Chill for at least 1 hour or until chocolate is firm. Cut into bars. Store in fridge.

over hee, the easy thing is to take a cube of tvaroh or 250g tvaroh (whey) add some water and whip it until smooth like pudding. chop in some bitter chocolate and add a taste of lemon, drop in some coconut flakes and a tadbit of rum. a wee bit of sugar and eat it.
double teh ingredients if you want to make pastry and use it for filling.
