we love blueberries. michigan blueberries are too awesome. when we're not eating them plain, or with granola and yogurt, i try to make yummy desserts with them. however, today i didn't want to cook (too hot out!)....so i found a recipe in an ad in gourmet magazine, by sara moulton, and adapted it. lillie did almost all of the work. she loves to make desserts!
you and your family, too, will be eating a whole pie in one day...heh heh.

easy blueberry pie
one graham cracker crust (i didn't have one, and made one quickly, but it is easier to buy one)
1 envelope unflavored gelatin
1 c heavy cream, divided
2 c drained plain yogurt (we use low-fat brown cow)
1/2 c sugar
1 T vanilla
3 c blueberries, rinsed and drained
stir the gelatin into 3 T of water in a saucepan, let soak for a few minutes. then heat it up over low for a minute or two, stirring, 'til dissolved.
whisk the gelatin mixture into 1/4 c cream in a small bowl.
in a larger bowl, mix the yogurt, vanilla, and sugar. whisk in the gelatin/cream mixture.
meanwhile, whip the remaining 3/4 c heavy cream until stiff peaks form. fold into the yogurt mixture, and then add almost all of the blueberries. scoop it into your pie crust, and then artistically toss the remaining blueberries on top. refrigerate for at least an hour (if you can).
surprise and delight your family with this summery pie - and don't be surprised when people go back for rather large seconds....

Sounds great :)) love blueberries there on sale at sam'm in a huge tub :), I'm hoping their sweet, the last ones were tart and I had to make blueberry syurp for pancakes with them came out great..
I just boiled them on low in a little water and two small pinchs of sugar and they fell apart in like 15 minutes, yummmy :)) turned something unusaable to our liking into something decent....
