Grandma's Easter Cheese

Yield: 1 Batch
3 lb Cottage cheese squeezed dry
3 ea Eggs
2 ts Salt
3 oz Cream cheese
1/2 c Sour cream
*NOTE:
This particular cheese is found all through the Slavonik nations from Bulgaria, Serbia, Ukraine, Moldova, Czech Republic Belorus & Russia as well as Poland.
Mix all of the ingredients well.
Place into a linen bag.
Tie bag up & hang to drip for 1 day.
Place bag between 2 boards & weight boards with a large stone.
Leave for 3-4 days.
Remove bag & keep cheese at room temp to turn yellow for about 6-8 hrs.
Refrigerate for 2-24 hrs.
Slice into chunks & enjoy.
