Salat Iz Sviokli - Beetroot Salad

Yield: 4 Servings

4 ea Beets
2 ea Apples for cooking*
2 oz Walnuts chopped
3 tb Mayonaise
1 tb Sour cream
1 ea Garlic clove minced

*NOTE: Granny Smith apples are great for this recipe.

Peel & cook beets.
Core & peel apples.
Grate beets & apples together.
Mix well & add walnuts & garlic.
Mix sour cream & mayonaise then mix into beet-apple mixture.
Chill for 1-2 hrs. & serve.

since I am planning a lot of different salads to serve with my birthday bbq party, this recipe is very wellcome!

This would be a great idea for a BBQ, and something different that most North Americans haven't yet thought of.

This sounds wonderful! I have a friend who is crazy for beets of any kind. I'll have to run in the garden and see if my beets are ready to be pulled and make some for her... Yum!
