he uses a charcoal grill. we only have a gas grill, so i think the flavor is less smoky. STILL, it was delicious. ed put on some soaked apple chips to get the smoke going. i wish we had a smoker!!
we used some of kevin weeks' rib rub and put it on some fresh polish sausages, which were first coated with a little bit of oil to make the rub stick. then ed put them on indirect heat, super-low, on the grill. it took about an hour to get it done.

halfway through, we opened up a bag of kettle potato chips and sprinkled them with chili powder and penzey's jalapeno powder. put them in a foil-lined 9x13 pan, on indirect heat. i don't do hot, so i also made some sprinkled with sea salt.
the chips were crispy and smoky. the sausages were juicy and spicy. oh my.

next time, we'll find some italian sausages and make a rub with some fennel and other herbs/spices. then ed wants to slice the sausages onto some pasta and cover it with marinara sauce. time to go to the grocery store.....

not being into meat, i think you could do this with soya sausages..
try over an open fire , put the susages on a stick into the fire, potatoes chips in aluminum foil too..
