Nothing says summer, than some good homemade syrup, and I would like to give you one, that is not so common, but very tasty! Enjoy

25-30 Elderflower Petals
2 Lemons
1 liter water
1 2 pounds sugar (fx. cane sugar)
2 tablespoon. citric acid
1 tablespoon. preservative (for the bottles)
Rinse the Elderflower petals very thorough in several changes of water. Add them to a big bowl or pot with a cover.
Rinse the lemons and cut them in slices. Add the lemon slices to the bowl. Mix the citric acid with the sugar and disolved the sugar in boiling water.
Pour the hot sugarwater on to the flowerpedals, add the cover, and let the syrup sit in the refrigerator for 4 days.
Strain the syrup, add the preservative and pour the syrup on to clean bottles.
Tip: Use lime instead or use half and half
Serving suggestion: dilute the syrup 1 to 5 and served it chilled
Serving Tip: In the summer it makes a nice cool drink mixed with whitewine.
