Baba's Chicken Salad
Cheap and goes a long way!
Cook a whole chicken in a big pot of water for several hours, cool and then strip. (The chicken not you)
While the chicken is cooking chop up:
4-5 stalks of celery
1 medium onion
2-3 large carrots (chop very small or use food processor on pulse a few times)
4 -5 pickles (what ever kind you like)
Mix the above ingredients with the chicken and several large globs of mayonnaise. The chicken sucks up the mayo so you will end up adding more.
Chop up a small, peeled apple (small pieces) and toss in, mix carefully so you don't bruise the apple.
(Granny smith is best)
Add salt and pepper to taste and a splash of your pickle juice. (I say "your pickle juice" because who else's would you use?)
After everything is mixed up real good, toss in some peas and again mix carefully so you don't make pea soup.
Toast big pieces of Polish bread, Rye or Whole grain and pile on this yummy salad. If you have patience, put it in the fridge and eat it the next day; Like Manna(thanks Donna) from Heaven.
*I have tried this with hard boiled eggs and liked it, but I hate making the eggs.. they never peel right.
** Save the broth from your chicken for soup or adding flavor to mashed potatoes (thanks mom) or rice. Freeze cubes of it and just toss them in when you need them.
***Dill pickle juice sucks in this
****I omitted onions, carrots and celery from my salad this evening... I was too lazy to go to the store.
*****The apple chunks are huge because my daughter and her boyfriend cut them up... they didn't peel them either.

Aileen, Baba(grandma) was a riot and was caught more than once in the buff.. especially at the cabins she used to own in Michigan.. she is tossing in urn as I speak I am sure.
mandi - when your eggs are done cooking, and you're running them under the cold water to cool off, take a spoon and whack the egg shells. this cracks them a bit, and the steam from the egg is released. VERY easy peeling!!
