Lynne Rossetto Kasper and The Splendid Table crew have brought "Stump the Cook" back to the show!
As we recently played it here on Gather, folks have some very innnnnteresting ingredients at hand. I'd like to see if we can stump each other again...or if we can be as good as Lynne in imagining tasty dishes out of diverse ingredients.

So let's do another round! List four or five ingredients you have on hand (Be kind, please be kind. Many may have Marshmallow Peeps available, but listing it here would be cruel - or a challenge. Hard to say.) and other cooks here will give it a shot.
***Would you like to appear on air with Lynne and see if you can stump the cook? Indicate your interest when you share your ingredient list, and we'll drop you a line. ***
Standard disclaimer: we may not be able to get to everyone but it will be fun trying.

feta cheese
rice
eggs
fresh tomatoes
I see a fresh tomato and onion salad alongside black beans (if you have a green pepper, you can make a sort of sofrito to grace the beans) over cooked rice topped with an over-easy fried egg sprinkled with a very teeny bit of feta.
Did I go too obvious? Any other cooks want to see if Mimi can you stump you? (Note, anyone with tips on getting dried beans ready in a hurry?)
cook the rice,
then dice the tomatoes up.
In a bowl, beat the eggs.
Add beans & rice & tomatoes & cheese to beaten egg mixture, and mix well.
Pour entire mixture into greased casserole dish, and bake at 375 degrees for 30 - 45 minutes or until egg part of mixture is set and cooked.
cook beans,
cook rice,
dice the tomatoes,
and hard boil the eggs,
then peel and chop boiled eggs.
On individual plates or large serving platter --
layer of beans, then rice, then tomatoes, then eggs, then cheese.
If you have any bottled sauces such as salad dressing or taco or sweet & sour sauce, this could be poured over the top.
On casserole above in my previous comment, if anyone should make that one they would need to make sure that the casserole is well cooked because of the raw eggs.
In this one, by hard-boiling the eggs, you avoid that problem.
Hamburger meat
potatoes
frozen corn
haven't shopped in weeks. Tired of McDonalds and KFC.
Soak1 lb. black beans overnight in water. Drain. Cover with fresh water 1 chopped onion, salt and cayenne to taste, and cook 3 to 4 hours, till done. Take 2 cups of cooked beans with aa small smount liquid (save the rest for another day)Place 1 c. beans in skillet. Crush other half, add to pan. Cook over medium heat till thickened. Set aside. Whip 4 egg whites till soft peaks form, fold in 4 egg yolks. Cook as omelet. Chop two plum tomatoes, sprinkle one tomato on omelet. follow with 1/2 c. feta. Fold omelet, place on platter. Top omelet with beans, and chopped tomato.
Serve with Basamati rice, seasoned with additional chopped tomato , garlic and cayenne.
red curry paste
chicken breasts
broccoli
What have you got in your spice drawer?
Mandi G.: assuming you have a pan you can use on the grill, the usual seasonings and utensils available:
Harriet S.
Crumble the meat into the pan that has heated on the grill. If you have an onion, dice it and add to the pan. Cook while stirring until browned; drain off most of the fat/liquid. Dice pre-microwaved potatoes, add to the meat along with the corn (if it's cosrn on the cob, cut off the cob first). Add salt and pepper to taste, along with a generous amount of powdered chili or red chili flakes. If you have it add a small 8 oz can of tomato sauce. Heat through and serve either on buns or with tortillas on the side.
I would simply poach the chicken breasts & partially steam the broccoli, then bring it all together with a coconut milk red curry sauce (You'll need a little sugar).
I suppose you could also try to marinate chicken and onion wedges in coconut/red curry and grill it like a shish kabob with broccoli (this is a TOTAL experiment , steam the broccoli very little first so it is tender inside and gets a little charred on the outside) just leave lots of room between the vegetables and meat and let me know if I've ruined a dinner for you *wink*
I'm curious... can you share a sample of what ingredients you might offer Lynne?
