
it is sunny, minty, tropically delicious. and it makes a LOT, so you'll be extra-happy for a few days.
fruit soup
one pineapple, cleaned and diced
one papaya, cleaned and diced
two mangos, cleaned and diced
one cantelope melon, cleaned and diced
some frozen peaches
a few cups (or more) of apricot nectar
5+ sprigs of fresh mint, de-stemmed
puree each fruit in the food processor or blender. dump into a large bowl or pan and keep adding the fruit puree when done. i puree the mint with the mangos, since i think it tastes better. when all the fruit is pureed, mix together with some apricot nectar.

you could add other fruits if you have them on hand - strawberries, blueberries, etc.
this provides a taste of summer, and is always welcome in our home.
