Nothing says Southern Love like some good, moist banana bread. In our family, we finally perfected the recipe for moist banana bread, and figured out the most enticing way to serve it! Simply double the recipe and bake it in a 13x9 casserole, then serve a piping hot square of banana bread topped with vanilla bean ice cream! If you have never had it this way it is a must have! And I promise you, this is the best banana bread recipe you will ever taste!
Mom's Banana Nut Bread
2 eggs
1 cup sugar
1/3 cup melted butter
3 large overly ripe bananas, mashed
2 cups flour
1 tsp baking soda
1 cup chopped walnuts
Beat eggs, sugar and melted butter, then add mashed bananas. Mix flour and baking soda together and then blend into banana mixture. Stir in nuts and pour mixture into greased loaf pan. Bake at 325 degrees for @ 50 minutes.
