The easy balsamic glaze also makes a wonderful marinade; I used it to marinate the pork overnight. To serve, I added a couple splashes of tomato juice to the glaze before reheating.

This sounds absolutely fantastic to me, however, I would definitely increase the amount of mustard called for. I think I would also reserve some of the glaze to serve rather than just pouring it all over . . .
