My original recipe calls for adding flour to thicken the stew, but I am not very fond of thickening very many dishes. I prefer a lot of broth, and feel that the potatoes thicken this enough.

This pie can be easily adapted to meet your tastes. Don't like tomatoes? Don't add them. Want it a little spicier? Toss in a couple packets of Mrs Dash or some cayenne or hot pepper flakes.
